A simple, flavorful and budget – friendly chicken in tomato sauce recipe, that the entire family will love. It tastes great with pasta, rice, potatoes or just with homemade bread.
My picky daughter is a huge fan of chicken in tomato sauce. When she smells it cooking, she always says: mmmmh, yummmmy. 🙂 This hearty and absolutely delicious chicken in tomato sauce recipe is so easy to put together and comes together in less than 1 hour. All you have to do is brown the meat, make the tomato sauce, add the browned meat, let simmer and done. Perfect for a mid-week dinner or to entertain the guests.

What you’ll need to make chicken in tomato sauce
- 3 (1,2 kg/ 2,6 lbs) chicken leg quarters
- 800 g/1.8 lbs canned tomatoes, undrained
- 2 medium onions
- 2 garlic cloves
- 5 tablespoons water
- 2 tablespoons fresh parsley/ 2 teaspoon dried parsley
- 1 teaspoon ground paprika
- chili powder, salt and pepper, to taste
- 1 tablespoon olive oil
How to make chicken in tomato sauce
Peel garlic cloves and onions and cut finely.
Then rinse parsley and chop finely. Pat dry chicken quarters with paper towels and cut off excess fat.
Using a sharp knife cut through the dislocated joint to separate the thigh from the leg. In a sauté pan or large pot heat 1 tablespoon of oil at medium-high and brown the chicken parts.
Remove the meat from the pot and set aside.
Add the onions to the same pan and fry for about 4 minutes. Add garlic and fry for another minute.
Stir in canned tomatoes, water, fresh or dried herbs and ground paprika.
Bring to a boil, then reduce the heat to medium – low, cover, and simmer for 15 minutes. Keep stirring in between. After 15 minutes season with salt, pepper and chili powder.
Add the chicken parts that you previously browned back to the pot as well as the drippings that came out of the meat.
Cover and let simmer for another 15 minutes. Taste the sauce and season with salt and pepper once more, if necessary. Let cook for 3 – 4 minutes and Done!!
