This loaded potato and sausage stew is surprisingly delicious, calls for simple ingredients and takes just 35 minutes to come together, from start to finish. Makes a perfect weeknight dinner or last minute meal!

Potato stew with sausages is a creamy, hearty, extremely delicious one pot dish that comes together in no time. Made with potatoes, carrots, precooked sausages, onion, garlic, heavy cream, cream cheese, vegetable stock and tomato paste. Feel free to use any vegetables you have on hand from pepper, spring onions, leek, zucchini you name it.

What you will need to make potato sausage stew

  • 800 g (1.8 lbs) potatoes (10 medium potatoes)
  • 3 tablespoons cream cheese
  • 150 ml (5.1 fl oz/ about 2/3 cup) heavy cream
  • 300 g (0.66 lbs) precooked sausages of your choice
  • 4 large carrots
  • 1 medium onion
  • 2 garlic cloves
  • 1 teaspoon dried thyme or any
  • 1 tablespoon tomato paste
  • 500 ml (16.9 fl oz/ about 2 cups) vegetable stock
  • 1 tablespoon butter and 1 tablespoon olive oil for sautéing onion and garlic

Sausages: You can use any precooked sausgaes you get your hands on to make this potato and sausage stew. (I normally use Bockwurst, Frankfurter Würstchen or Wiener Würstchen to make this stew.)

Vegetables: Feel free to use any vegetables you have on hand from bell peppers, spring onions, leek, zucchini you name it.

How to make potato and sausage stew recipe

Begin by peeling, washing and dicing potatoes. Next wash the carrots, peel them and cut into cubes as well.

Then peel and mince onion and garlic.

Heat olive oil and butter in a large sauce pan or pot over medium heat. Add minced onion and garlic and cook until lightly brown.

Then add the potatoes and carrots to the pot. Followed by tomato paste and mix very well.

Then stir in vegetable stock, thyme and season with salt and pepper.

Cover and let cook for 15 minutes. In the meanwhile cut the sausages into small pieces.

After 15 minutes stir in heavy cream and cream cheese, cover and let cook for about 5 minutes.

Add Vienna sausages, cover and let cook until the sausages are warm. To serve garnish with fresh parsley or chives if you like and enjoy.
