Gooey Chocolate Muffins

Delicious, super moist, very very chocolatey and easy to make chocolate muffins. Easy enough to be made by kids. Made with dark chocolate, unsweetened cocoa powder, eggs, milk, baking powder, sugar, butter and plain flour. Definitely a keeper!

These chocolate muffins are a family favorite! They’re chocolatey, gooey, so moist and easy to put together.

No need to melt chocolate and butter. All you have to do is cut chocolate into chunks, combine flour, cocoa powder and baking powder and sieve and then make the batter and bake.

What you’ll need to make BEST chocolate muffins

  • 100 g (3.5 oz/ ½ cup) sugar
  • 2 medium eggs, room temperature
  • 200 ml (about ¾ cup + 1 tablespoon) milk, room temperature
  • 100 g (about ¼ cup + 2 tablespoons/ 3.5 oz) butter, room temperature
  • 200 g (7.1 oz/ 1 2/3 cups) plain flour (all purpose flour)
  • 4 tablespoons unsweetened cocoa powder
  • 1 tablespoon baking powder
  • 1 tablespoon vanilla sugar
  • 200 g (7.1 oz) chocolate, dark chocolate

 Vanilla: This recipe calls for vanilla sugar, but feel free to use about 1/4 teaspoon vanilla extract. Just use one tablespoon more sugar if you’re using vanilla extract.

How to make super moist and gooey chocolate muffins

Begin by lining 12 muffin tin with (cupcake/ muffin) paper liners and preheating the oven to 180 °C (356 °F), with top and bottom heat. Next combine flour, cacao powder and baking powder and sieve.

Then cut dark chocolate into chunks.

Add butter, sugar, vanilla sugar/ extract and eggs to a bowl and beat with a handmixer until creamy. 

Beat in flour mixture and then milk. Repeat the process until you’ve used up all the flour and milk.

Stir in chocolate chunks and divide the batter within the prepared muffin cups. Then bake for 25 minutes.
