This make-ahead German meat salad, though it’s more of a spread, than salad, is so simple to make, delicious and a real crowd-pleaser.
Made with a handful of ingredients (Lyoner sausage aka. German bologna, pickled cucumbers, mayonnaise and yellow mustard) in no time. Serve it for breakfast, lunch or as a light dinner spread on a slice of bread.
Fleischsalat is one of the commonly availabe and popularly consumed salads in Germany. My German in laws don’t just enjoy it on a slice of Bauernbrot (German farmer’s rye bread) or Brötchen. But they also use it to make their German spaghetti salad.
With this easy to follow, quick and delicious recipe, you too can make German meat salad just like Fleischsalat from a German butcher.
What you’ll need to make meat salad
- 150 g (0.33 lbs) Lyoner sausage or German bologna
- 75 g (2.6 oz) pickled cucumbers
- 80 g (2.8 oz) mayonnaise
- 1/2 teaspoon mild yellow mustard
- Salt and pepper to taste, if desired
- Fresh parsley for garnish
How to make Fleischsalat
First remove the sausage casing and slice the sausage into thin strips.
Next cut the pickled cucumber into thin strips as well.
Mix mayonnaise and mustard in a bowl until well combined.
Add sausage and pickled cucumber strips and mix well. Season with salt and freshly ground pepper if necessary.
Let rest (in the fridge) for at least 1 hour before serving. Enjoy!
Notes:
- Feel free to substitute half of mayonnaise with yogurt or just use Miracle Whip instead of mayo to make the salad somehow calorie friendly.
- You can make this meat salad ahead of time and keep it in the fridge for up to 3 days.
