What you will need to make herbed butter

  • 250 g (8.8 oz/ about 1 cup) Butter, room temperature
  • 50 g (1.8 oz) fresh willd garlic leaves
  • 3 garlic cloves
  • 1 tablespoon lemon juice, freshly squeezed
  • ½ teaspoon lemon zest
  • ½ teaspoon salt
  • ½ teaspoon black ground pepper
  • ⅓ teaspoon cayenne pepper

How to Make Herbed Butter with Wild Garlic

Begin by washing the wild garlic. To clean it, simply wash the wild garlic leaves thoroughly under cold running tap water to remove any dirt. Shake the leaves to remove excess water, then coarsely chop them.

Next, peel and mince the garlic. Now, add all the ingredients into a jar and blend with a hand blender.

  • Alternatively, you could finely chop the wild garlic and mix all the ingredients together without blending.

Transfer the butter mixture onto a rolled-out plastic wrap and roll it into a log. Fold the ends nicely around the log.

Place the butter in a plastic zipper bag, label it, and refrigerate for up to a year. When needed, simply slice off the desired amount and add it to your dishes.
