German classic, this thin and crispy onion and bacon tart otherwise known as Flammkuchn is easy, quick and delicious. Made with flour, water, salt and oil – no yeast and topped with onions, crème fraiche and bacon in no time. Makes a perfect anytime treat.
Flammkuchen (direct translated flame cake) aka. Tarte Flambeé is a specialty from the region of Alsace, that’s very popular in Germany. Alsace is located in the eastern part of France next to Germany and Switzerland. The classic Tarte Flambeé is made with just flour, water, salt and oil and topped with any topping of your choice.
Here is why I love this onion and bacon tart…

- it takes only 40 minutes to make including the preparation time
- it’s very versatile. You can top the tart with any topping of your choice. You can top it with (a) wild garlic/ spring onions or leek instead of onions, (b) with pear/ pumpkin/ figs slices, goat cheese and honey, (c) with slices of salmon and spinach or (d) with ham and rocket leaves. Let your fantasies be the limit.

Easy Tarte Flambeé Recipe
Yield: 2 Tarts (16 slices)

What you’ll need to make French onion and bacon tart without yeast
Ingredients for the tart:
– 250 g (8.8 oz/2 cups) plain flour (all purpose flour), plus extra for dusting
– ½ teaspoon salt
– 125 ml (4.2 fl oz/ ½ cup) lukewarm water
– 2 tablespoons olive oil
– a pinch of nutmeg
Ingredients for the tart topping:
– 100 g (3.5 oz) bacon cut into small pieces
– 200 g (7 oz/ ¾ cup) sour cream
– 3 small onions/ 1 large onion
– 1 tablespoon fresh chives (optional)
– salt and pepper
You’ll also need:
– Hand mixer
– 2 bowls
– 2x parchment papers
– spoon, knife & cutting board
– hot water to soak the onions
– kitchen towel/ cling film
How To Make onion and bacon tart: Tarte Flambeé (Flammkuchen) step by step photo recipe
1. Make the dough: In a bowl combine flour, water, oil and salt. Using your hands or a hand mixer combine the ingredients to a firm dough.
Cover the dough with a kitchen towel or cling film and set aside while preparing the topping.
2. Make the topping: In the meantime preheat the oven to 250°C (482 °F), with both top and bottom heat. Next peel and thinly slice the onions. Put the onions in a bowl and cover with hot water. Let stand for 1 minute and drain. This will get rid of the raw onion taste.
NOTE: You can also put the sliced onion in a bowl with approximately 2 tablespoons of water and put in the microwave for 30 seconds.
3. Cut fresh chives into small pieces and season sour cream with salt and pepper.
4. Roll out dough: Tip the dough on a lightly floured parchment paper/ surface and divide the dough into two equal doughs. Lightly flour the rolling pin. Roll out the dough very thin into a rectangle or any shape of your choice. Carefully put the parchment paper with the rolled out dough on a baking sheet.
5. Top and bake: Spread the cream uniformly thorough over the surface of the rolled out dough. Align onions on the dough spread with cream and sprinkle with bacon.
Bake for 15 minutes. After 15 minutes remove from the oven and bake the second tart. Sprinkle with fresh chives and enjoy.
