Wors Stew With Rice

Wors stew with rice is an African – style one pot sausage stew that’s so full of flavor. It’s easy and quick to make, uses a handful of ingredients and easily adjustable.

Made with fresh sausages, uncooked long grain white rice, frozen veggies, onion, and garlic and seasoned with curry, Paprika, thyme, chili flakes, sugar and salt and pepper. Makes a perfect weeknight dinner.

Wors stew is popular in southern African countries like Namibia, South Africa, and Botswana and today I’m sharing my version of preparing wors stew with rice.

The authentic wors stew recipe calls for Boerewors – a coarse-grained large spiral fresh sausage with a distinct flavor that’s very popular in Namibia.

Boer” means farmer, and “wors” means sausage. But I have made this wors stew with fresh sausages I could get my hands on, and it still turned out delicious!

What you’ll need to make one pot wors stew with rice

  • 500 g (1.1 lbs) fresh sausages
  • 1 medium onion
  • 2 garlic cloves
  • 1 teaspoon salt
  • 2 tablespoons tomato paste
  • 1 teaspoon sugar
  • 1 teaspoon dried thyme
  • 2 teaspoons curry
  • 1 teaspoon ground paprika
  • 200 g (7.1 oz) frozen veggies
  • 180 g (6.3 oz) long grain white rice
  • 450 ml (about 1 ¾ cups) water
  • ½ teaspoon pepper
  • ¼ teaspoon chili flakes (OPTIONAL)

How to make African style rice with sausages and frozen veggies

Cut sausages into chunks and peel and mince garlic and onion.

In a large saucepan or pot, heat 2 tablespoons sunflower oil (or whatever you prefer) over medium heat and brown the sausages. Don’t overcrowd the pot, otherwise the meat won’t brown. Remove the meat from the pan and set aside.

In the meantime, clean the rice. Simply put rice in a bowl and add cold running water. Stir the rice around with your hands and drain. Repeat the process for two to three times.

In the same pan (without cleaning it) add the onions and garlic and cook for about 5 minutes or until soft. Next add tomato paste, thyme, pepper, paprika, curry, sugar and salt and cook for another minute.

Then add frozen mixed veggies, followed by drained rice and browned sausages. Stir in water,

Cover, and bring to a boil over medium high heat. Once the water starts to boil, without lifting the lid, reduce the heat to medium low and let cook for 20 minutes.

After remove the pot from the heat and let sit for 10 minutes.

Use a fork and fluff the rice and enjoy!
