Pasta With Potatoes Recipe

Pasta with potatoes aka Penne e Patate, is an Italian one pot classic. It’s comforting, hearty and full of fresh flavors! Made with simple ingredients in no time! Makes a perfect weeknight dinner or last minute meal!

This Neapolitan classic one pot pasta with potatoes, otherwise known as Pasta e Patate is a delicious, humble and comforting vegetarian meal! Made with tomatoes, onion, garlic, celery, fresh basil, potatoes, mixed pasta and Parmesan cheese.

Pasta e Patate is totally different from one pot pasta whereby all the ingredients are just mixed at once and cooked together. Here you have to make a tomato base first and let cook for some time before adding pasta.

My pasta e patate is authentic with a little twist. I’ve used only one pasta type to make it instead of mixed pastas of different shapes.

How to make one pot Italian pasta and potatoes

Making this one pot meal is simple and super quicker than you think. All you have to do is cook onion and garlic.

Add celery, fresh basil, canned/ well ripen tomatoes and diced potatoes. Let cook for 10 minutes.

Add pasta and let cook for another 10 minutes. Stir in Parmesan cheese, let sit for a few minutes and enjoy.

What you’ll need to make one pot pasta with potatoes

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 garlic cloves
  • 1 medium onion
  • 100 g (3.5 oz) celery cut into small slices
  • 2 handful fresh basil leaves
  • 400 g (0.88 lbs) canned tomatoes
  • 800 g (1.8 lbs) potatoes (10 medium potatoes)
  • 1 liter (33.8 fl. oz/ about 4 cups) hot water
  • 70 g (2.5 oz) Parmesan cheese
  • 300 g (10.6 oz) pasta
  • salt and pepper to taste

How to make pasta and potatoes in tomato sauce

Begin by peeling, washing and dicing potatoes. Next peel and mince onion and garlic.

Heat olive oil and butter in a large sauce pan or pot over medium heat and cook minced onion and garlic until lightly brown. Add celery, hand torn basil and mix very well.

Add diced potatoes, canned tomatoes and half of the water. Bring to a boil, cover and let simmer for about 10 minutes.

After 10 minutes add pasta and the remaining water and stir well. Cover and let cook for about 10 minutes. Stir halfway through!!

After 10 minutes stir in Parmesan cheese.

Remove from the heat and let rest for 5 minutes. Enjoy.
