German Pasta Salad With Sausage

German pasta salad with sausage is an absolutely delicious, endlessly versatile, easy and quick make quick lunch/dinner or side dish at gatherings. Such a great way to use up leftover pasta. You can make this pasta salad ahead of time and have a delightful tummy-filling meal waiting in the fridge on busy days.

Ingredients

  • 1 apple large
  • 4 hard boiled eggs
  • 215 g (about 7 ½ oz) canned peas and carrots drained
  • 250 g (about ½ lbs) Lyoner sausage aka. German bologna
  • 220 g (7.8 oz)  meat salad
  • 600 g (1 1/3 lbs) pasta cooked
  • 1 tomato medium
  • 1 onion small
  • 3 pickled cucumbers
  • 2 tablespoons sunflower oil
  • 4 tablespoons white wine vinegar
  • 3 tablespoons ketchup
  • 1/2 tablespoon salt
  • 1 tablespoon yellow mild mustard
  • 1 teaspoon paprika
  • 1 teaspoon freshly ground pepper
  • 1 tablespoon Miracle whip or mayo
  • 4 tablespoons pickled cucumber brine (juice)

Instructions

  • Begin by removing sausage casing and slicing the sausage into thin strips. Next cut the pickled cucumber into thin strips as well. Then peel and finely chop onion and apple and cut the tomato it into small pieces. Peel hard boiled eggs and cut into small pieces as well. If the canned carrots are a little bit big, just cut them into thin slices.
  • Add cooked pasta, meat salad, sausage, peas, carrots, tomato and pickled cucumbers to a large bowl (the eggs will come in towards the end). Next add the seasonings: sunflower oil, mustard, vinegar, ketchup, salt, paprika, mayonnaise/ whip and pickled cucumber brine (juice) and mix well. Now add the eggs to the pasta mixture and combine well. Refrigerate for at least 1 hour and serve chilled.

Notes

  • You can make this pasta sausage salad ahead of time and keep it in the fridge for up to about 3 days.
