German Apple Pudding Cake Recipe

German apple pudding cake is creamy, fruity, and incredibly delicious apple cake, much like the apple cake made by German grandmothers and one of our favorite cakes throughout the year.

Equipment

  • 26 cm(10 inch) spring-form (or cake tin with removable base)

Ingredients

  • 180 g (1 ½ cups/ 6.3 oz) plain flour/ all purpose flour
  • 2 large eggs room temperature
  • 100 g (3 ½ oz) butter soft
  • 80 g (1/3 cup + 1 tablespoon/ 2.8 oz) sugar
  • 2 teaspoons baking powder
  • pinch of salt
  • 1 teaspoon vanilla extract / vanilla paste (alternatively, you can also use 2 tablespoons vanilla sugar, just reduce the amount of regular sugar by 2 tablespoons if you’re using vanilla sugar).

For the filling

  • 40 g (⅓ cup/ 1.4 oz) cornstarch (cornflour)
  • 1 teaspoon vanilla extract / vanilla paste (alternatively, you can also use 2 tablespoons vanilla sugar, just reduce the amount of regular sugar by 2 tablespoons if you’re using vanilla sugar).
  • ½ teaspoon ground cinnamon
  • 400 ml (1 ⅔ cups/ 13.5 fl.oz) milk
  • 125 g (about ½ cup/ 4.4 oz) butter room temperature
  • 3 large eggs room temperature
  • pinch of salt
  • 75 g (1/4 cup + 2 tablespoons/ 2,6 oz) sugar
  • 600 g (1.3 lbs) apples

Instructions

  • Start off by lining a 26 – cm (10.2 inches) springform cake tin with a parchment paper at the bottom and grease the sides with butter. Preheat the oven to 180°C (356 °F) with both up and low heat (Convection bake function: 160 °C (320 °F)).
  • Mix the flour with a pinch of salt and baking powder in a bowl and set aside. Now, put the butter, sugar, and vanilla in a separate bowl and beat until creamy.
  • Add the eggs one at a time and whisk. Add the flour mixture and combine well into a smooth dough.
  • Transfer the batter to the prepared spring-form (or cake tin with removable base). Smooth with a spoon or spatula and set aside.
  • Next, peel the apples, remove the core, and cut into slices. Put the apples in a bowl, add ground cinnamon, mix well, and set aside.
  • To make fluffy pudding with whipped egg whites, begin by separating the eggs and placing them into two different bowls. Next, use a fork to mix the egg yolks.
  • Add a pinch of salt to the bowl with egg whites and beat until stiff.
  • In a small bowl, combine the cornstarch (cornflour) with one-third of the provided amount of milk, and stir until well-mixed. In a small saucepan, combine the remaining milk, sugar, and vanilla, and bring the mixture to a boil.
  • As soon as the milk mixture begins to boil, stir in the cornstarch mixture while continuously stirring. Continue to heat until the pudding mixture starts to bubble.
  • At this point, remove the saucepan from the heat. Add the butter to the pot, followed by the egg yolks, and stir thoroughly. Finally, gently fold in the whipped egg whites.
  • Add the apple pieces to the pudding mixture and mix them in thoroughly. Transfer the apple pudding mixture into the springform pan with the batter and bake it for approximately 55 minutes.
    * If the cake achieves a lovely golden-brown color before the recommended baking time is reached, you can cover it with a piece of baking paper. This will allow it to continue cooking on the inside without burning on the surface.
  • After baking, let the cake cool for a few minutes. If desired, lightly dust it with powdered sugar and enjoy!!!
