- 1.8 kg (4 lbs) pork ribs
- 1 tablespoon sunflower oil
- 2 medium onions
- 2 garlic cloves
- 3 tabslepoons brown sugar
- 135 g (4.4 oz) honey
- 3 tablespoons balsamic vinegar or wine vinegar (red or white)
- 2 tablespoons Soy sauce or Worcestershire sauce
- 100 ml (about ½ cup) water
- 800 g (28.2 oz/ 4 cups) canned tomatoes with their juices
- Cayenne pepper, salt, and black pepper to taste
Pat the spare ribs dry with paper towels and place them on a baking sheet. Preheat the oven to 200°C (392°F) with both top and bottom heat (Convection bake: 180°C (356°F)).
Peel and chop the onions and garlic. Heat the sunflower oil in a saucepan over medium heat, then sauté the onions for 3 minutes. Add the garlic and sauté for another minute. Stir in the sugar and continue stirring until it dissolves.
Add the water, undrained canned tomatoes, soy sauce, vinegar, honey, and chili flakes. Whisk to combine, then taste and season with salt and pepper. Bring the sauce to a boil, then reduce the heat to medium-low. Cover and let it simmer for 10 minutes. Remove from heat.
Pour half of the BBQ sauce over the spare ribs, spreading it evenly to coat. Bake for 45 minutes.
After 45 minutes, turn the spare ribs over and pour half of the remaining sauce on top. Bake for another 30 minutes.
Turn the spare ribs once more and bake for a final 15 minutes. Meanwhile, simmer the remaining BBQ sauce over medium-low heat for 10 minutes.
Spread the simmered BBQ sauce over the spare ribs and serve.
