Sweet German Rhubarb Rolls

These sweet rhubarb rolls, with their great buttery flavor and the perfect balance of sweetness and tartness, are not only easy and quick to make but also incredibly delicious. Made with a handful of simple ingredients such as sugar, quark, vanilla, flour, baking powder, and butter, in less than 40 minutes, from start to finish.

Equipment

Ingredients

  • 300 g (10.6 oz/ 2 ½ cups) plain flour/ all purpose flour
  • 200 g (7.1 oz) quark room temperature (SEE NOTES)
  • 100 g (3.5 oz) butter soft (SEE NOTES)
  • 1 ½ tablespoons baking powder
  • 200 g (7.1 oz) rhubarb washed, peeled (if the rhubarb is old), and sliced
  • 1 teaspoon vanilla paste or vanilla extract (alternatively, you can also use 2 tablespoons vanilla sugar, just reduce the amount of regular sugar by 2 tablespoons if you’re using vanilla sugar).

Instructions

  • Begin by preheating the oven to 200°C (392 °F) with both up and low heat (Convection bake function: 180 °C (356 °F)).
  • In a bowl combine flour, a pinch of salt, sugar and baking powder and set aside. In a separate bowl, add the sugar, butter, vanilla paste (or vanilla extract/vanilla sugar), and quark (or whatever you are using) and beat until creamy.
  • Add flour mixture and knead for one minute, until all the ingredients are well combined. Next, add rhubarb and knead it into the dough with oiled hands.
  • Divide the dough into about 10 equal pieces. Grease your hands with oil and shape each piece into a ball.
  • Place the rhubarb rolls on a baking sheet that's lined with a parchment paper. Bake the rolls in the preheated oven for about 25 minutes or until lightly golden brown.
  • After baking, let the rolls cool for a few minutes. If desired, lightly dust them with powdered sugar and enjoy!!! These rolls taste great fresh out of the oven or at room temperature.

Notes

  • If you don't have access to quark, you can use alternatives such as cream cheese, sour cream, or Greek yogurt.
  • If you want you can also use vegetable oil instead of melted butter.
