Pasta And Wors Recipe

This one pot African style pasta and wors recipe is quick, flavorful, and family - friendly. Easy enough for any weeknight.

Equipment

Ingredients

  • 300 g (2/3 lbs) fresh sausages
  • 1 medium onion
  • 1 large bell pepper (capcium)
  • 2 garlic cloves
  • 2 tablespoons tomato paste
  • ½ teaspoon ground ginger
  • 1 teaspoon salt
  • 1 teaspoon chutney SEE NOTES
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • freshly ground black pepper and chili flakes to taste
  • 200 g (7 oz) pureed tomatoes
  • 700 ml (about 10 fl.oz/ 3 cups) water hot
  • 250 g (8.8 oz) pasta uncooked
  • 2 tablespoons vegetable oil for browning the sausages

Instructions

  • Cut sausages into chunks and peel and mince garlic and onion. Rinse bell pepper, cut it in the middle, remove the core and dice it.
  • In a large saucepan or pot, heat 2 tablespoons sunflower oil (or whatever you prefer) over medium heat and brown the sausages. Don’t overcrowd the pot, otherwise the meat won’t brown. Remove the sausages from the pan and set aside.
  • In the sausage drippings, add the onions, bell pepper and garlic and cook for about 5 minutes or until soft. Add tomato paste, thyme, paprika, ginger, chutney/ sugar, salt, black pepper and chili flakes and cook for another minute.
  • Stir in pureed tomatoes and water and bring to a boil. Then add pasta and browned sausages and stir well. Bring to a boil and let cook for about 12 minutes. Keep stirring in between, so that the bottom of the pot doesn’t burn. Serve immediately.

Notes

  • If you don't have chutney, go ahead and use about 1 teaspoon sugar, just to create an overall more balanced stew.
  • Feel free to use any fresh sausage of your choice, if you don't have access to boerewors.
