Equipment

  • Casserole dish (23 x 35 cm (9 x 13 inches))
  • Saucepan or pot

Ingredients

  • 1 kg (2.2 lbs) bone-in pork chops
  • 200 ml (6.8 fl oz/ about ¾ cup) tomato ketchup
  • 120 ml (4 fl oz/ ½ cup) water
  • 2 tablespoons white wine vinegar/ balsamic vinegar
  • 1 teaspoon soy sauce/ Worcestershire sauce
  • 2 tablespoons brown sugar
  • 3 tablespoons honey
  • 2 small onions
  • chili powder/ flakes, salt and pepper to taste
  • 1 tablespoon sunflower oil
  • 4 medium potatoes OPTIONAL

Instructions

  • Rrinse the meat and pat it dry with paper towels. Put the meat in a casserole dish and set aside. Then peel the potatoes, rinse them under cold water and cut them into halves. Scatter the potatoes in the casserole dish around the pork chops.
Preheat the oven to 200 °C (392 °F), with both top and bottom heat.
  • Peel and slice the onions. In a saucepan heat 1 tablespoon of sunflower oil and sauté the onions for 3-4 minutes. Add sugar and keep stirring until sugar has dissolved. Next add water, ketchup, soy sauce, vinegar, honey and chili flakes. Whisk to combine and bring to a boil. Taste and season with salt and pepper and remove from heat. Pour the BBQ sauce over the pork chops and spread it over the chops and potatoes to coat. Bake for 30 minutes. Afterwards turn the chops and potatoes and bake for another 30 minutes.

Notes

  1. You could also marinate the chops overnight if you have time and bake them the next day, because they taste even better.
