Italian apple cake

This with vanilla and cinnamon flavored Italian apple cake recipe is moist, fluffy and absolutely delicious. Made with just a few ingredients and minimal preparation time. Such a perfect anytime treat!

Equipment

Ingredients

  • 250 g (8.8 oz/ about 2 cups + 2 tablespoons/ 8.8 oz/) plain flour/ all purpose flour
  • 150 g (1/3 lbs/ ¾ cup) sugar
  • vanilla seeds from half vanilla bean or ¼ teaspoon vanilla extract/ vanilla paste
  • 3 medium eggs room temperature
  • tablespoons baking powder
  • ½ teaspoon ground cinnamon
  • 100 g (3.5 oz/ about ¼ cup + 2 tablespoons) butter melted
  • 150 g (5.1 fl. oz/ about 2/3 cup) milk room temperature
  • 1 kg (2.2 lbs) apples

Instructions

  • Begin by lining the cake tin with a parchment paper at the bottom and grease the sides with butter. Next mix and sieve flour and baking powder and set aside.
    If you’re using vanilla seeds from vanilla bean, then split the vanilla bean lengthwise with the tip of the knife and scrape out the vanilla seeds. Mix the scraped out seeds with sugar very well.
  • Crack the eggs in a bowl, add sugar and beat until creamy. Add melted butter, cinnamon, vanilla paste/ extract/ vanilla sugar and mix until well combined. Add part of the flour and baking powder mixture and then milk. Repeat the process until you’ve used up all the flour and milk and set aside. Don't over beat the batter when adding milk and flour. Otherwise you'll remove all the air out. For starters I recommend you to use a spatula to stir in the milk and incorporate the flour.
  • Next preheat the oven to 180 ° C (356 °F), with both top and bottom heat. Then peel, core and thinly slice apples. All you have to do is take one apple at a time, peel it, then cut it into quarters, remove the core and cut it into thin slices. Immediately after thinly slicing the apples, add them to batter and fold them in. Repeat the process until you've had used up all the apples.
  • Transfer the apple batter to a spring - form lined with spring form and bake for 50 minutes. After 50 minutes switch off the oven and let the cake be inside the warm oven for 10 minutes. Remove the cake from the cake tin. Dust with powdered sugar and enjoy.

Notes

  • It's very important that you're using ingredients are at room temperature.
  • Don't over beat the batter when adding milk and flour. Otherwise you'll beat all the air out. For starters I recommend you to use a spatula to stir in the milk and incorporate the flour.
