Rooibos Iced Tea Recipe

This delicious, healthy and refreshing rooibos iced tea is loved by grown ups and kids too. Made with rooibos tea and fresh ginger and sweetened with honey. Garnished with lemon and lemon balm! So appealing!

Ingredients

  • 3 rooibos tea bags
  • 50 g / 1.8 oz fresh ginger
  • 1.5 liter/ 50.7 fl oz/ 6 cups boiled water
  • 1 large lemon organic
  • fresh lemon balm leaves plus extra for garnish
  • 1 cup ice cubes
  • 3 tablespoons honey
  • 1.5 liter/ 50.7 fl oz/ 6 cups cold water to dilute the tea

Instructions

  • Peel ginger root and finely chop it. Place minced ginger root, the tea bags and honey in a heat proof bowl or tea pot and pour over boiled water. Cover and let steep until you'll be able to touch with your hands. Once the tea has cooled, put it in the fridge and let chill for at least 2 hours or overnight. 30 minutes before serving, transfer the tea to a glass jar or serving pitcher, leaving ginger root and tea bags that have settled at the bottom of the tea pot behind .Add cold water to the tea pot with the tea bags and ginger that you've previously used and then transfer to the glass jar as well. Add fresh lemon balm leaves, thinly sliced lemon and ice cubes. Let steep once again and serve.
