Ingredients

  • 300 g (10.6 oz/ 2 ½ cups) plain flour/ all purpose flour plus extra 2 tablespoons for dusting
  • 50 g (about 1.8 oz) fresh wild garlic leaves chopped, or frozen (SEE NOTE 1)
  • 60 g (2.1 oz/ 1/2 cup) grated cheese mild
  • 250 g (8.8 oz) quark room temperature (SEE NOTE 2)
  • 3 tablespoons vegetable oil
  • 3 tablespoons milk room temperature
  • 1 large egg room temperature
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 ½ tablespoons baking powder

Instructions

  • Begin by preheating the oven to 180°C (356 °F) with both up and low heat (Convection bake function: 160 °C (320 °F)).
  • In a bowl combine flour, salt, ground pepper and baking powder and whisk. Add quark, milk, oil, and the egg. Using a hand mixer with dough hooks knead for a half a minute. Add wild garlic and grated cheese and knead for another half a minute. You could also use a wooden spoon to make the dough.
  • Transfer the dough onto a floured surface. Sprinkle the dough with flour and knead it for one minute. You don’t want to over knead the dough, otherwise you won’t have a fluffy bread.
  • Next shape the dough into a round loaf shape. Place the round bread loaf on a baking sheet lined with a parchment paper. Using a sharp knife that’s greased with oil cut a cross into the top of the bread loaf.
  • Bake for about 50 minutes. If the bread starts to brown too quickly, before the end of the baking time, just cover it aluminum foil and continue baking. After baking let the bread cool down for a few minutes and enjoy.
  • This no yeast bread with wild garlic will stay moist and fluffy for about 3 days at room temperature. Just wrap it in a plastic or cover it with a clean kitchen cloth (tea towel) or put it in bread box.

Notes

  1. No access to wild garlic? No problem! You can still make this delicious bread using fresh herbs like chives, rosemary, parsley, or oregano. For a more flavorful and aromatic bread, try using a combination of different herbs.
  2. For the dough in this wild garlic bread recipe without yeast, I used Quark. However, you can also use cream cheese, cottage cheese, Greek yogurt, or strained yogurt as substitutes, depending on your preference or availability.
