Wild Garlic Salt Recipe
I love anything wild garlic and this wild garlic salt made with just 2 ingredients: fresh wild garlic leaves, and coarse salt is such a great way to preserve wild garlic.

- 500 g (1.1 lbs) sea salt coarse
- 150 g (1/3 lbs) fresh wild garlic leaves
Put wild garlic leaves in a sink with water and swish the leaves around to remove the dirt. Shake the leaves to remove excess water. Then place them in a large colander to drain. Meantime preheat the oven to 60 °C (140 °F).
Blend wild garlic leaves with about one quarter of the salt. Then add the remaining salt to the wild garlic salt mixture and combine well.
Transfer the wild garlic salt to a baking sheet lined with parchment paper. Put the baking sheet in the preheated oven. Crack open the oven door and insert a thick wooden spoon. keep it like that while the salt is drying. Let the salt dry for about 3 hours or until the salt is completely dry. Keep stirring in between. Pack in glass jars and store in a cool dry place. It’s better to put wild garlic that you use on daily basis in a small container. Just refill it when it’s empty. Because the wild garlic salt losses it’s aroma when you constantly opens it.
- You could let the salt dry at room temperature. This can take a couple of days for the salt to dry completely though, depending on the climate.
- If where you're it's sunny, just let the salt dry outside.
