Ingredients

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 garlic cloves
  • 100 g (3.5 oz) celery cut into small slices
  • 2 handful fresh basil leaves
  • 400 g (0.88 lbs) tomatoes canned
  • 800 g (1.8 lbs) potatoes (10 medium potatoes)
  • 1 liter (33.8 fl. oz/ about 4 cups) water hot
  • 70 g (2.5 oz) Parmesan cheese grated/ cut into thin slices
  • 300 g (10.6 oz) pasta
  • salt and freshly ground pepper to taste

Instructions

  • Begin by peeling, washing and dicing potatoes. Next peel and mince onion and garlic. Heat olive oil and butter in a large sauce pan or pot over medium heat. Add minced onion and garlic and cook until lightly brown. Add celery, hand torn basil and mix very well. Add diced potatoes, canned tomatoes and half of the water. Bring to a boil, cover and let simmer for about 10 minutes. Afterwards add pasta and the remaining water and stir well. Cover and let cook for about 10 minutes. Stir halfway through. After 10 minutes stir in Parmesan cheese. Remove from the heat and let rest for 3 to 5 minutes. Enjoy.
