Ingredients

  • 500 g (17,6 oz) store - bought fresh ravioli or tortellini (stuffed with spinach and ricotta) or any other pasta of your choice
  • 100 g (3,5 oz) smoked mozzarella cheese (scamorza) scamorza
  • 100 g (3,5 oz) butter
  • 50 g (1,8 oz) pistachio flour
  • salt and freshly ground pepper to taste

Instructions

  • Begin by cutting cheese into slices. Next bring salted water to a boil and cook ravioli or any pasta that you're using according to package instructions.
  • In the meanwhile heat a pan over medium heat. Add butter and cook until the butter has browned. Once the butter has browned remove the pan from the heat.
  • Stir in the browned butter part of pistachio flour, then part of grated cheese, then pistachio flour and grated cheese again, until you've had used up all the flour and cheese. Season with salt and pepper. Add drained ravioli and mix gently.

Notes

  1. You can substitute ravioli with tortellini or any other pasta of your choice. Just bear in mind that if you're using spaghetti for instance, then the cook time of the recipe will increase
  2.  If you don't have access to scamorza, feel free to use any smoked cheese of your choice. All you want is to get that smoked flavor in the sauce.
  3. Browning butter to get that nutty flavor takes around 5 minutes. Be careful not to burn it. If you see that the butter is burning, just reduce the heat or remove the pan from the heat for a couple of seconds.
