German Apple Crumble Cake

This German apple crumble cake with raisins and almond flakes is a family favorite. It's moist even on the third day, delicious (with the right amount of sweetness ) and easy to make. Perfect for any celebration!

Ingredients

For the cake base

  • 250 g (8,8 oz/ 2 cups) plain flour (all purpose flour)
  • 150 g (5,3 oz) butter romm temperature
  • 120 g (4.23 oz/ ⅔ – 1 tablespoon) sugar
  • 2 teaspoons baking powder
  • 3 medium eggs Germany, large US  room temperature
  • 1 tablespoon vanilla sugar SEE NOTES
  • 4 tablespoons milk room temperature

For the filling

  • about kg (2.2 lbs) apples
  • 2 teaspoons lemon juice
  • 100 g (3.5 oz / 2/3 cup) almond flakes/ chopped almonds
  • 1 hand full raisins
  • 2 teaspoons ground cinnamon

For the crumbles

  • 230 g (8.1 oz/ about 1 cup – 1 tablespoon) butter
  • 200 g (7 oz/ 1 cup) sugar
  • 400 g (14,1 oz/ 3 1/3 cups) plain flour (all purpose flour)
  • 1 tablespoon vanilla sugar SEE NOTES

For the super moist effect

  • 200 ml (about 6.8 fl.oz/ ¾ cup + 1 tablespoon) heavy cream (whipping cream)

Instructions

  • Grease the baking sheet with butter. I've used a 45x37 cm (17.72 x 14.57 inch) baking sheet.
  • In a bowl combine flour, baking powder, eggs, sugar, butter, milk and vanilla extract/ vanilla sugar and whisk to a smooth cream. Using a spatula scrape the batter into the prepared baking sheet, smooth the top and set aside. Then preheat the oven to 200 ° C (392 °F), with both top and bottom heat.
  • Next, peel the apples, remove the core and cut into slices. Put the apples in a bowl add the remaining ingredients for the filling except the almond flakes or chops and mix well. Scatter the apple filling mixture all over the cake base. Then sprinkle almond flakes/ chopped almonds all over the top.
  • In the same bowl that you used to make the cake base combine flour, butter, sugar and vanilla extract/ sugar. Using your hands or handmixer mix all the ingredients together until small crumbles start to form. Sprinkle crumble evenly over the apple mixture and bake for about 40 minutes.
  • Immediately after baking remove the cake from the oven and pour the heavy cream evenly on it.
  • Let the cake absorb all the cream before serving. Dust the apple crumble cake with powdered sugar (icing sugar), then cut into pieces and serve. Feel free to serve your apple crumble cake with a nice scoop of vanilla ice cream or whipped cream.

Notes

  1. * Vanilla: This recipe calls for vanilla sugar, but feel free to use about 1 teaspoon vanilla extract instead of vanilla sugar. Just increase the amount of regular sugar with 1 tablespoon if you’re using vanilla extract.
  2. Feel free adjust this recipe according to your liking. (1) You can skip the filling, (2) or substitute the apples with fruits of your choice and leave out raisins if you’re not a fan. If you skip the filling, just bake the cake for 25 – 30 minutes.
