Equipment

  • Hand blender (blender or food processor)
  • Jar
  • Saucepan or pot

Ingredients

  • 40 g (1.5 oz) fresh ginger root
  • 400 g (14.1 oz) fresh tomatoes
  • 1 large onion
  • 2 garlic cloves
  • 50 g (1.8 oz) fresh chilli peppers
  • 1 large red bell pepper about 150 g/5.3 0z
  • 2 teaspoons honey/ agave or maple syrup
  • 2 tablespoons sunflower oil
  •  salt and freshly ground black pepper to taste

Instructions

  • Begin by peeling and cutting the onion into bite – sized pieces. Next, peel ginger root and garlic and cut into small pieces.
  • Then wash the sweet red pepper and chilli peppers, remove the core, and roughly chop into large pieces. Now wash the tomatoes and cut them into quarters.
  • Add bell pepper, onion, garlic, ginger, chilli peppers and tomatoes to a jar and blend the ingredients together. You could also use a blender or food processor.
  • Pour the pepper sauce mixture into a saucepan or small pot. Add honey (or what ever you’re using), oil and combine well. Bring to a boil, cover and reduce the heat. Let simmer for 40 minutes or until the sauce has thickened.
  • Season with salt and freshly ground black pepper. Remove from the heat and let cool to room temperature. Then fill the sauce into jars and chill in the refrigerator until ready to serve. (Use up the pepper sauce within 3 weeks).
