Tzatziki Sauce Keto

Light, refreshing and delicious keto friendly tzatziki sauce. Made with just 4 ingredients: garlic, Greek yogurt (or strained yogurt), cucumber and olive oil in no time.

Equipment

  • Garlic press
  • Box grater

Ingredients

  • 200 g (7 oz) strained Greek yogurt
  • 1 tablespoon olive oil
  • 2 garlic cloves
  • ½ cucumber (approx. 250 -300 g (9 - 10.5 oz))
  • ½ teaspoon salt to sprinkle of cucumber
  • salt and freshly ground pepper to taste

Instructions

  • Peel and grate the cucumber on a plate. Put the grated cucumber in a sieve, with a bowl under, sprinkle with ½ teaspoon salt and mix well. Let cucumber sit for about 15 minutes.
  • In the meantime peel and finely chop garlic cloves. You could also press them. In a bowl combine yogurt, oil and garlic and mix well. Season with salt and pepper. After 15 minutes squeeze out the remaining water from the grated cucumber using your hands and stir it it in the yogurt mixture. Let your tzatziki rest for some hours.

Notes

  1. letting cucumber sit for 15 minutes is very important, to get rid of most of the water, otherwise your tzatziki will be watery.
  2.  I like to peel my cucumber before using it, but you can also just rinse it and use it.
  3. If you're using a normal yogurt, just strain it using a cheesecloth to remove out the water.
