Spinach And Feta Triangles

Made with frozen spinach and store - bought puff pastry, these spinach and feta triangles make great snacks or appetizers.

Ingredients

  • 1 store – bought puff pastry (fresh, ca. 275 g/ 10 oz)
  • 100 g (3.5 oz) frozen spinach thawed and drained
  • 100 g (3.5 oz) feta cheese
  • 1 tablespoon cream cheese
  • 2 tablespoons olive oil
  • ¼ teaspoon dried oregano
  • ground nutmeg and freshly ground pepper to taste

You'll also need for the egg wash

  • 1 egg yolk
  • a dash of milk

Instructions

  • Begin by preheating the oven to 200 °C (392 °F) with both up and low heat. Next, crumble feta into a bowl. Then add olive oil and about ¼ teaspoon oregano and mix until well combined. In a second bowl combine thawed and very well strained spinach and cream cheese and season with freshly ground pepper and a pinch of nutmeg.
  • Next, roll out puff pastry on a lightly floured cutting board and cut it into 6 squares. Then spread feta – olive oil cream uniformly onto the corner half of each square and sprinkle with spinach mixture. Fold opposite corner over filling to form a triangle and press edges with a fork to seal. Transfer to a baking sheet lined with a parchment paper Then brush each triangle with the egg wash and bake for 20 minutes or until nicely golden brown.
